- Firm Tofu 1/4
- Potato Flour for coating
- Oil for deep frying
- Daiko grated for garnish
- Spring Onion for garnish
- Katsuobushi for garnish
- Ginger grated for garnish
- Nori for garnish
Sauce:
- Konbu Dashi 200 ml
- Shoyu 2 tbsp
- mirin 2 tbsp
- Sake 2 tbsp
- Sugar 1 tsp
- Salt pinch
Procedure:
- Heat oil to 175*C for deep frying
- coat tofu with potato flour
- shake off excess, deep fry
- place in soup bowl
- garnish with daikon, spring onion,
- bonito flakes and nori
- bring to boil sauce ingredients
- fill soup bowl, up to half of tofu level
- serve hot
Note:
- Daikon - radish
- katsuobushi - dried bonito fish flakes
