If you note any food allergy reaction whenever you or your love ones ate certain food ... from rashes, cough to asthma and anaphylactic reaction ... confirm it with an allergy test ... besides taking food allergen off the recipe and menu ... you need to ensure that there are no cross contamination from the worktop to equipments used ... read labels of packaged products ... unsured don't use ... it can be life threatening for someone with severe allergy and anaphylactic reaction.

Clear Soup with Shrimp (10 pax)

Ingredients:
  • 2 lit dashi
  • to taste salt
  • 15 ml soy sauce
Garnish:
  • 1 lemon zest, yellow part only
  • 15 snow peas
  • 10 medium shrimp
Procedure:
  1. bring dashi ti simmer ... add salt to taste
  2. add soy sauce
  3. finely julienne lemon zest
  4. trim, wash snow peas ... cut them at an angle into diamond shape ... blanch in boiling water ... drain ... cool
  5. peel, devein shrimp .. blanch in boiling water till cook ... drain
  6. rinse soup cups or bowl wit hot water to warm them ... place a shrimp, few pieces of snow peas, julienne lemon zest
  7. make sure soup is hot ... ladle 200 ml into soup bowl
Alternative for Garnish:
  • tofu ... cubed
  • cooked pork loin or chicken breast ... diced, batonnet, julienne
  • lobster tail ... thinly slice
  • cooked fish, snapper, cod  ... flakes
  • clams ... steamed, shelled
  • julienne carrots
  • white mushrooms ... thinly slices
  • shitake mushrooms ... julienne
  • wakame .... soak, cut into small pieces, simme in soup for 2 mins
  • chinese cabbage ... shredded
  • watercress ... leaves
  • fresh ginger ... finely shredded
  • bammboo shoots ... thinly sliced
  • white radish ... thinly sliced or shredded
