Yakitori / Grilled Chicken

Ingredients:
  • Chicken Thigh 1 pc
  • Wooden Skewer

Terriyaki Marinate:
  • Dark Shoyu 350 ml
  • Mirin 2 tbsp
  • Sake 1 tbsp
  • Sugar 3 tbsp

Procedure:
  • wash, debone and clean chicken thigh
  • cut into bite size cubes
  • brown chicken bone with a little oil, put aside
  • caramelize miri, sake, sugar till golden brown
  • add dark shoyu, brown chicken bones
  • strain sauce for use
  • skewer chicken cubes with skin side up
  • deep in terriyaki sauce
  • grill, brush with terriyaki sauce occasionally
