- Soba 1 portion
- Water
- Salt
Sauce:
- Mirin 30 ml
- Shoyu 30 ml
- Dashi 150 ml
Garnish:
- Spring Onion
- Nori
- Wasabi
Procedure:
- bring water with salt to boil
- boil soba for about 6 - 7 mins
- drain and ice bath for 5 mins
- drain dry and keep covered in chiller
- in a saucepan, heat up mirin to remove the alcohol content
- add in shoyu and dashi, stir mix well
- off fire, cool to room temperature, keep in chiller
- before serving, place sauce in a bowl
- place noodle on a plate with nori, spring onion, wasabi
- to be serve cold
