Food Allergy
If you note any food allergy reaction whenever you or your love ones ate certain food ... from rashes, cough to asthma and anaphylactic reaction ... confirm it with an allergy test ... besides taking food allergen off the recipe and menu ... you need to ensure that there are no cross contamination from the worktop to equipments used ... read labels of packaged products ... unsured don't use ... it can be life threatening for someone with severe allergy and anaphylactic reaction.
Chawan Mushi (16 pax)
Ingredients:
- 350 g chicken breast, deboned, skinned
- 15 ml soy
- 15 ml sake
- 16 small shrimp, peeled, deveined
- 6 scallion, thinly sliced
- 100 g water chestnut, sliced
- 12 no eggs
- 2 lit dashi or chicken stock
- 15 ml soy
- 30 ml mirin
- to taste salt
Procedure:
- cut chicken brest into 1cm dice ... marinate with soy, sake for 15 mins ... drain
- divide chicken, shrimp, scallion, water chestnut equally into 16 custard cups (250 ml heatproof cups)
- beat eggs ... add dashi, soy, mirin ... season to taste with salt
- starin egg mixture to remove foam or bubbles ... ladle egg mixture without foam or bubbles into cup ... 160 ml each
- cover each cup with foil ... steam for 15 mins till custard set
- serve hot or cold
