If you note any food allergy reaction whenever you or your love ones ate certain food ... from rashes, cough to asthma and anaphylactic reaction ... confirm it with an allergy test ... besides taking food allergen off the recipe and menu ... you need to ensure that there are no cross contamination from the worktop to equipments used ... read labels of packaged products ... unsured don't use ... it can be life threatening for someone with severe allergy and anaphylactic reaction.
Oyako Donburi (16 pax)
Ingredients:
- 2 lit dashi
- 150 ml soy sauce
- 150 g sugar
- 60 g sake
- 2.8 lit japanese short grain rice
- 3.2 lit water
- 700 g chicken breast, debone, skinned
- 16 scallions
- 16 eggs
Procedure:
- in a saucepan ... add dashi, soy sauce, sugar, sake ... simmer to dissolve sugar ... set aside
- wash rice ... chaning water several times ... drain
- place rice in saucepan ... add water ... cover and let it stand for 30 mins
- set pan pover high heat ... bring to a boil ... reduce heat to medium ... let it cook till water completely absorb ... do not remove cover to check
- reduce heat to low ... cook for anothe 5 minutes ... remove from heat ... let stand for 15 minutes ... before removing cover
- cut chicken breast into 2.5 cm strips
- trim roots ... from scallions ... cut digaonally 1 cm length
- for each portion ... put 45 g chicken ... 1 sliced scallion ... 125 ml dashi in saute pan ... simmer till chicken is almost done
- break 1 egg into a bowl ... mix lightly ... do not beat
- pour egg in a stream around the chicken ... simmer till egg is hal done
- put 375 ml hot rice inn a large bowl
- give the egg, chicken a light stir ... pour over the rice
