Shrimp and Vegetable Tempura (16 pax)
Ingredients:
- 48 shrimps
- 4 green pepper
- 500 g sweet potato
- 32 shitake mushrooms
- 700 g cake flour
- 700 ml ice water
- 6 egg yolk
- 700 ml dashi
- 150 ml soy sauce
- 90 ml mirin
- as needed flour
- 250 g daikon, grated
- 45 g fresh ginger, grated
Procedure:
- peel, leave the tail, devein, butterfly shrimp
- core, seed peppers ... cut lengthwise into 8 wedges
- peel sweet potato ... cut into slice 4 mmm thick
- clean mushroom ... trim bottom of stem
- sift flour into a mixing bowl
- mix water and egg yolk together ... add to flour
- mix well ... batter should be thinner than pancake batter
- make a dipping sauce ... mix dashi, soy sauce, mirin
- divide shrimp, vegetables equally into 16 portion
- fry vegetable first than shrimp
- drege with flour ... shake off excess ... dip into batter ... drop into clean hot oil 175*C ... fry till golden brown
- drain ... serve at once ... each portion with 60 ml dipping sauce ... grated daikon, grated ginger
